Avocado and Chicken Salad

Time:20Minutes | Serves 1

Ingredients

1 cup chicken, already cooked and shredded

½ medium sized cucumber

1 avocado

4 small tomatoes (cherry tomatoes work well)

2 small onions

3 tsp lime or lemon juice or zest

3 tbsp olive oil

Pepper

Salt

Preparation

Prepare the vegetables by chopping them into small pieces

Slice the avocado. Discard the skin and the pit, as you won’t need them

Put the lemon or lime juice or zest into a bowl with the olive oil and mix them together

Place the shredded chicken on a platewithout cooking it further, as it should be cold. Then, add the veggies on top of it. (Note: this is a useful method of using up leftovers from the night before)

Put the olive oil and juice mixture onto the chicken and veggies and then mix them together

Add salt and pepper to taste
